Weekly Lunch Prep Plan

For anyone who wants five grab-and-go lunches made in one hour flat.

Weekly Lunch Prep Plan

This is the core system: one hour on Sunday produces five lunches that cost a few dollars each and land around 400–460 calories. One protein, one grain, one roasted vegetable, one sauce, assembled five ways so no two days taste the same.

The 60-minute flow: oven to 425°F and rice pot on at minute zero; seasoned chicken thighs onto a sheet pan at 0:10; a second tray of vegetables roasts at 0:30; sauce gets stirred at 0:45; five containers are assembled by 1:00, with two portions frozen for Thursday and Friday.

Storage guide: chicken and grains hold 4 days; roasted vegetables 4–5; keep sauce in a small separate cup so vegetables stay firm; freeze the two containers meant for the end of the week and move them to the fridge the night before. Soft greens go in on the morning you eat, never on Sunday.

The week sits between 1,450 and 1,650 calories a day with lunch as the anchor and 30–40 g of protein at midday to hold you to dinner.

Portion guide

Portions are written for ~1,500-calorie days. If your job is physical, add a second protein serving at lunch and keep the snack; the day lands near 1,650.

Frequently asked questions

How long does weekly lunch prep actually take?

About 60 minutes for five lunches, including cleanup, once you run the components in parallel — oven, rice pot, and sauce bowl at the same time. The first attempt takes longer; the second week is noticeably faster.

How do I stop prepped lunches from tasting the same?

Prep components, not finished meals. Keep the chicken, rice, and roasted vegetables plain, then finish each box with a different sauce and a fresh element — salsa, hummus, Greek yogurt ranch, teriyaki, or balsamic — across the five days.

Should I freeze any of the lunches?

Yes — freeze the two containers you plan to eat Thursday and Friday. Move them to the fridge the night before; they thaw completely by lunch. This keeps every day tasting fresh instead of re-heated-from-Sunday.
